Vegan Orange Spice Cake

I tweaked this cake that I found in Joy of Cooking and just tasted it - soo yummy. Its also cool that I have all these vegetarian cook books, but I found the recipe in Joy of Cooking!

Here is the recipe from the book:

Ultra-Orange Cake (Vegan)

Preheat oven to 350 degrees, grease and flour 8" cake pan or line bottom with parchment/wax paper

Whisk together in large bowl:

1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt

Add and stir until smooth:

1 cup orange juice
1/3 cup vegetable oil
1 tablespoon grated orange zest
1 tablespoon white or cider vinegar
1 teaspoon vanilla

Pour batter in pan, bake for 30-35 minutes, cool for 10 min, remove from pan and peel off paper (if used), cool on rack.

I made it a spice cake and added about 1/3 - 1/2 teaspoon of cinnamon, alspice, ground cloves, and nutmeg. (I didn't have any ginger.)

I sprinkled powdered sugar over one and I made a glaze with powdered sugar and orange juice for the other. The glaze was really good but made it super sweet. If you don't want it to be as sweet, the recipe says you can reduce the amount of sugar by 2 tablespoons.

Also, I got a job pouring wine and serving cheese at a farm shop that is part of Kluge winery and vineyards out near Monticello. I don't have to know much about wine and it in a gorgeous area. I start Thurs so cheers to me not embarassing myself!
